(BITTER-SWEET VEGETABLE MEDLEY)

This medley of vegetables cooked in milk and spices is the perfect way to begin a sumptuous Bengali feast.

Preparation time: 45 minutes

Serves: 2 persons

½ drumsticks

25 gm sweet potatoes

½ raw banana

35 gm bitter gourd

2 sheem (broad beans)

½ potato

2–3 eggplants (cut into finger

shapes of 3-inch length each)

½ tsp paanch phoron whole

¼ tsp paanch phoron powder

50 ml refined oil

2 tsp coconut paste

½ tsp ginger paste

2 tsp mustard paste

250 ml milk

2 dry red chillies

2 green chillies, slit

5 gm ghee (clarified butter)

Salt to taste

Sugar to taste
